Caprese Chicken

Ingredients

  • 4-5 to 7oz chicken breasts-pounded to an even thickness
  • 2 tsp. Italian seasoning
  • 2 tsp. sea or kosher salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cracked black pepper
  • 1 Tbsp. olive oil
  • 8oz fresh mozzarella, sliced into 8 even pieces
  • 2 tomatoes, sliced into 1/2″ slices
  • fresh basil to taste
  • aged balsamic vinegar to taste

Directions

  1. Place one chicken breast in between waxed paper or plastic wrap. Using a rolling pin, pound the chicken breast to an even thickness of a little less than 1″. Repeat for remaining breasts.
  2. Combine the Italian seasoning, sea salt, garlic powder, onion powder, and pepper in a small bowl and stir to combine.

3. Brush chicken with olive oil, then sprinkle with seasoning blend. Flip the chicken oven, then oil the other side.

4. Heat a grill or pan to high heat and cook 5-6 minutes per side until the internal temp reads 155F.

5. Top each breast with 2 slices of mozzarella. Continue grilling or cooking 3 more minutes.

6. Move chicken breasts to a platter and top with slices of fresh tomatoes, sprinkle with fresh basil, salt and pepper and drizzle with balsamic vinegar.
