Ingredients:
Crust
- 1 c sugar
- 3 c flour
- 1 t baking powder
- 1/2 salt
- 1/4 t cinnamon
- 1 c unsalted butter
- 1 large egg, beaten
Peach Layer
- 1/4 c sugar
- 1 T cornstarch
- 1/4 t cinnamon
- 5 large peaches (about 4-5 c peeled and diced)
- 1 t fresh lemon juice
Icing
- 1 c powdered sugar
- 1/4 t almond extract
- 1 T milk (or as needed)
Directions:
1. Preheat oven to 350 degrees. Lightly grease a 9 X 13 glass baking pan.
2. In medium bowl, whisk together first 5 crust ingredients. Cut in butter until mixture resembles coarse sand. Add the egg, mix until dough begins to hold together. Gently press jus more than half the dough into pan.
3. In large bowl, whisk together 1/4 c sugar, cornstarch and cinnamon. Add peaches and toss to combine. Drizzle with lemon juice and toss to coat. Pour over crust and spread evenly.
4. Press together remaining crumb topping to create clumps, scatter over fruit layer. If using glass dish, bake at 350 for 50-55 minutes or until lightly browned (375 for 40-45 if using metal pan). Cool completely.
5. For icing, whisk together ingredients and drizzle on bars just before serving.
