Ingredients:
- 6 leftover Everything Bagels, halved, then torn into bite size pieces
- 6oz. Cooked bacon, ham or sausage
- 3/4 c. grated sharp cheddar cheese, dived
- 8 large eggs
- 2-1/2 c. mlk
- 1 tsp. ground mustard
- 1/2 tsp kosher salt
- 1/4 tsp. black pepper
- 2 Tbs. chopped fresh chives
- 8 oz, cream cheese or reduced fat cream cheese (don't use fat free)
Directions:
1. Lightly coat a 9X13 with baking spray. Scatter the bagel pieces in the bottom of the dish. Scatter the meat over the top of the bagels and sprinkle with 1/2 c. cheese.
2. In a large bowl, combine the eggs, milk, mustard, salt, and pepper until smooth. Pour the egg mixture over the bagels, then lightly press down on the bagels so that they absorb some of the egg. Cut the cream cheese into small pieces, then dot the pieces on top. Sprinkle on the fresh chives and remaining 1/4 c. cheese. Cover the casserole tightly with plastic wrap and refrigerate for 2 hours or overnight.
3. When ready to bake, remove the casserole from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 350 degrees. Tent the casserole with foil and bake, covered, for 40 min. Uncover and bake for 15-20 more minutes.
