Ingredients:
Dressing
- 1 c. mayonnaise or 1/2 c. mayo and 1/2 c. greek yogurt
- 1-1/2 Tbs. white wine vinegar
- 2 tsp. dijon mustard
- 2 tsp. honey
- salt & ground pepper to taste
Macaroni Salad
- 8oz. Dry macaroni
- 2 hard boiled eggs, chopped
- 1 c. diced red pepper
- 1 c. matchstick carrots, chopped
- 3/4 c. diced celery
- 1/4 c. red onion
- 2 Tbs. fresh parsley for garnish
Directions:
1. Cook macaroni in salted water according to directions (1/2 Tbs. salt to water)
2. Drain and rinse with cold water, and cool and drain completely.
3. In a bowl, stir together all the dressing ingredients.
4. Add well-drained macaroni to a large mixing bowl with the rest of the salad ingredients and pour the dressing over the top. Gently mix to evenly coat all ingredients.
