Ingredients:
Chicken Marinade:
- 1 c peach preserves
- 2 T olive oil
- 2 t soy sauce
- 2 t apple cider vinegar
- 2 t Dijon mustard
- 2 t minced garlic
- 1-1/2 t salt
- 1/2 t pepper
- 1/4 t red pepper flakes
Chicken:
- 1-1/2 lbs boneless, skinless chicken breasts
- 1 small red onion, thinly sliced
- 1 T olive oil
- 2-3 medium peaches, pitted and thinly sliced
Directions:
1. In a medium bowl, stir together marinade ingredients. Refrigerate half of the mixture (the remaining mixture will be used to marinate the chicken).
2. Pat chicken breasts dry and pound each to 1/2 -inch thickness.
3. Add chicken, sliced onion, and half the marinade to a resealable plastic bag. Mix to coat and refrigerate for at least 30 minutes, up to overnight.
4. When ready, preheat oven to 375 degrees.
5. Heat oil in a large oven-safe skillet over medium-high heat. Add contents of bag of marinated chicken and sear on each side until golden brown.
6. Pour reserved peach marinade over chicken. Top with sliced peaches. Transfer the skillet to the oven and roast for 25-30 minutes until the chicken reaches an internal temperature of 165 degrees.
