Ingredients:
Coleslaw Ingredients
- Small head green cabbage
- Small head purple cabbage
- 2 c corn kernels (fresh or frozen, thawed)
- 1/2 small red onion
- 1/2 c fresh cilantro, chopped
- 1/2 c feta cheese, crumbled
Dressing Ingredients
- 1/2 c mayonnaise
- 1/2 c sour cream
- 1/4 c lime juice
- 1 t chili powder
- 1/2 t ground cumin
- 1/2 t smoked paprika
- 1/2 t salt
- 1/4 t black pepper
- 1-2 T milk (optional)
- Lime wedges, extra cilantro, and cheese for garnish
Directions:
- Thinly shred cabbages; thinly slice red onion. Combine cabbages, onion, corn, cilantro, and cheese.
- In a separate small bowl, whisk together dressing ingredients; add milk as needed to reach desired consistency.
- Pour dressing over cabbage mixture, toss to evenly coat. Taste and adjust seasoning if needed.
- Transfer to serving bowl and garnish with lime wedges, additional chopped cilantro, and/or extra cheese. Serve immediately.
