Ingredients:
- 4 poblano peppers
- 1 lb ground beef
- 1 t ground cumin
- 1 t chili powder
- 1 t garlic powder
- 1 c cooked rice
- 1/2 c black beans
- 1/2 c corn
- 15 oz can fire roasted diced tomatoes
- 4 oz can green chilies
- 1 c grated mozzarella*
Directions:
- Preheat oven to 350 degrees.
- Halve peppers, remove seeds and membranes. Bake on greased baking sheet 10-15 minutes.
- In large skillet, combine beef and rice, season with spices and sauté 5–8 minutes or until meat is cooked through. Stir in drained and rinsed beans and corn, drained tomatoes and diced green chilies. Cook 1-2 minutes.
- Spoon mixture into peppers, bake 10 minutes or until peppers are tender and cheese is melted. *May use Mexican-blend cheese
