Peach and Blackberry Galette

INGREDIENTS:

  • 1-1/4 c flour
  • 1 T sugar
  • 1/4 t salt
  • 1/2 c unsalted butter, chilled
  • 1/4 c ice water
  • 2 large ripe peaches
  • 1 c fresh blackberries
  • 1/4 c sugar (for filling)
  • 1 T cornstarch
  • 1 t vanilla extract
  • 1 T lemon juice
  • 1 T milk or cream
  • 1 T coarse sugar (for topping)

DIRECTIONS:

  1. In medium bowl, combine flour, 1 T sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, 1 T at a time until a dough forms.
  2. Wrap dough in plastic wrap and refrigerate for 30 min.
  3. Combine peeled and sliced peaches with blackberries; gently toss with 1/4 c sugar, cornstarch, vanilla, and lemon juice.
  4. On lightly floured surface, roll out chilled dough into a 12-inch circle. Transfer to parchment lined baking sheet. Spoon fruit mixture onto center of dough, leaving a 2-inch border. Fold edges of dough over the fruit, pleating as you go. Brush dough with milk or cream and sprinkle with the coarse sugar.
  5. Bake at 400 degrees for 35-40 min or until the crust is golden brown and fruit is bubbly and tender. Allow galette to cool for 15 min before slicing and serving.
