Ingredients

Cookie Crust:

  • 1-1/2 c flour
  • 1-1/2 t cornstarch
  • 1 t baking powder
  • 1/4 t salt
  • 1/2 c unsalted butter
  • 3/4 c granulated sugar
  • 1 large egg
  • 1 t vanilla

Topping:

  • 8 oz full fat cream cheese
  • 3 T unsalted butter
  • 1-1/4 c powdered sugar
  • 1 t vanilla
  • 3 c assorted sliced fruit (berries, grapes, kiwi, mandarin oranges, pineapple)

Directions

  1. In a large bowl, cream butter and sugar, add the egg and vanilla.
  2. Combine dry ingredients; add to wet ingredients and beat on low speed until combined. Cover dough and chill in refrigerator for 20 minutes. Press dough into 10-inch circle on greased pizza pan.
  3. Bake 17-19 minutes or until edges are very lightly browned. Cool completely.
  4. In a medium bowl, beat cream cheese and butter until smooth; add powdered sugar and vanilla and beat until creamy.
  5. Spread over cooled cookie crust. Decorate with fruit.
  6. Cut into slices to serve. Leftovers will keep well in the refrigerator for up to 3 days.
