Halloween Bean Dip

Ingredients:

  • 29 oz can black beans
  • 3/4 c Rotel Original
  • 1/3 c diced red onion
  • 1 bell pepper, orange or red, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/3 c chopped cilantro
  • 1 clove garlic, minced
  • 1 lime, zested and juiced
  • Blue corn chips


Directions:

  1. Rinse and drain black beans, drain Rotel.
  2. Combine ingredients (except chips) and toss until well mixed.
  3. Season with 3/4 t salt and 1/2 t black pepper. Taste for seasonings and adjust as needed with extra salt or pepper, lime, or even hot sauce.
  4. Serve with blue corn chips
