INGREDIENTS:
- 1-1/4 c flour
- 1 T sugar
- 1/4 t salt
- 1/2 c unsalted butter, chilled
- 1/4 c ice water
- 2 large ripe peaches
- 1 c fresh blackberries
- 1/4 c sugar (for filling)
- 1 T cornstarch
- 1 t vanilla extract
- 1 T lemon juice
- 1 T milk or cream
- 1 T coarse sugar (for topping)
DIRECTIONS:
- In medium bowl, combine flour, 1 T sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, 1 T at a time until a dough forms.
- Wrap dough in plastic wrap and refrigerate for 30 min.
- Combine peeled and sliced peaches with blackberries; gently toss with 1/4 c sugar, cornstarch, vanilla, and lemon juice.
- On lightly floured surface, roll out chilled dough into a 12-inch circle. Transfer to parchment lined baking sheet. Spoon fruit mixture onto center of dough, leaving a 2-inch border. Fold edges of dough over the fruit, pleating as you go. Brush dough with milk or cream and sprinkle with the coarse sugar.
- Bake at 400 degrees for 35-40 min or until the crust is golden brown and fruit is bubbly and tender. Allow galette to cool for 15 min before slicing and serving.
