Chocolate Chip Skillet Cookie

INGREDIENTS:

  • 12 T butter, melted & cooled
  • 1 c light brown sugar
  • 1/2 c granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 t vanilla
  • 2 c plus 2 T flour
  • 1/2 t soda
  • 1/2 t salt
  • 1-1/2 c chocolate chips

DIRECTIONS:

  1. Heat oven to 325 degrees.
  2. Combine flour, soda, and salt; set aside. Mix butter and sugars until well blended. Add the egg, egg yolk, and vanilla, and mix well. Stir in flour mixture just until combined. Gently stir in chocolate chips.
  3. Press cookie dough into a 10- or 12-inch cast iron skillet OR any oven-safe skillet. Bake 28-35 minutes or until cookie is just barely brown. (Don’t overbake as it will continue to cook in the hot skillet.)
  4. Allow to cool 20–30minutes before cutting. Slice and serve warm with a scoop of ice cream.

Variations:

  • Vary the chips, using white chocolate, butterscotch, semi-sweet or milk chocolate, mini chips or chocolate chunks.
  • Add chopped nuts or pecans.
  • Add a big spoonful of peanut butter into dough.
