Ingredients
Cookie Crust:
- 1-1/2 c flour
- 1-1/2 t cornstarch
- 1 t baking powder
- 1/4 t salt
- 1/2 c unsalted butter
- 3/4 c granulated sugar
- 1 large egg
- 1 t vanilla
Topping:
- 8 oz full fat cream cheese
- 3 T unsalted butter
- 1-1/4 c powdered sugar
- 1 t vanilla
- 3 c assorted sliced fruit (berries, grapes, kiwi, mandarin oranges, pineapple)
Directions
- In a large bowl, cream butter and sugar, add the egg and vanilla.
- Combine dry ingredients; add to wet ingredients and beat on low speed until combined. Cover dough and chill in refrigerator for 20 minutes. Press dough into 10-inch circle on greased pizza pan.
- Bake 17-19 minutes or until edges are very lightly browned. Cool completely.
- In a medium bowl, beat cream cheese and butter until smooth; add powdered sugar and vanilla and beat until creamy.
- Spread over cooled cookie crust. Decorate with fruit.
- Cut into slices to serve. Leftovers will keep well in the refrigerator for up to 3 days.
