Ingredients:
- 29 oz can black beans
- 3/4 c Rotel Original
- 1/3 c diced red onion
- 1 bell pepper, orange or red, diced
- 1 jalapeno pepper, seeded and minced
- 1/3 c chopped cilantro
- 1 clove garlic, minced
- 1 lime, zested and juiced
- Blue corn chips
Directions:
- Rinse and drain black beans, drain Rotel.
- Combine ingredients (except chips) and toss until well mixed.
- Season with 3/4 t salt and 1/2 t black pepper. Taste for seasonings and adjust as needed with extra salt or pepper, lime, or even hot sauce.
- Serve with blue corn chips
