Ingredients:
- 2 medium sweet, crisp apples
- 1 medium yellow onion
- 1 t salt
- 1 t garlic powder
- 3/4 c apple cider
- 2 boneless, skinless chicken breasts
- Pretzel Buns
Slaw Ingredients:
- 6 c finely shredded green cabbage
- 1 medium sweet, crisp apple
- 2 T apple cider vinegar
- 1 T olive oil
- 1/4 t salt
- 1/4 t ground pepper
- 2 T finely chopped fresh leaf parsley, optional
Directions:
- Core and dice apples, thinly slice onion; place in bottom of 6-quart slow cooker.
- Sprinkle with 1/2 t salt. Add 1/2 c apple cider. Sprinkle both sides of chicken with 1/2 t salt and garlic powder, nestle into apple/onion mixture.
- Cover, cook on HIGH for 3-5 hours or LOW for 5-7 hours or until chicken is tender and cooked through.
- Remove chicken, shred or dice and place back in slow cooker.
- Add remaining 1/4 c cider, stir. Add additional salt or cider to taste.
- Combine slaw ingredients, toss to combine, and let sit for at least 10 minutes. Serve over Apple Chicken on Pretzel Buns.
